A simple recipe to pop in your slow cooker for those nights when you know you're going to be strapped for time!
1kg chicken breast
3 tbsp BBQ sauce
3 tbsp Soy Sauce
3 tbsp Tomato Ketchup or Tomato Sauce
Chop your chicken breast into thin strips, and place into the base of your slow cooker. Add the BBQ sauce, soy sauce and tomato ketchup/sauce, and mix in, ensuring you cover all of the chicken in the pot. Cook on high setting for 4 hours (depending on your slow cooker settings). If you have the opportunity, stir chicken at about the 2 hour mark (optional - no absolutely necessary though). Once the cooking time has finished, use a fork or a wide flat spatula or serving spoon to shred the chicken (it should shred quite easily at this stage). If you wish to add a little bit of extra BBQ sauce at this stage go for it, it all depends on how you like it.
Serve with some home made cold slaw in a bowl, or on hamburger buns!
